For my adjustment of status, do I need to include my my marriage license or my marriage certificate? What is the difference?

For the adjustment of status you need to include a copy of the marriage certficate.
The marriage license gives you the authorization to get married. A marriage certificate proves that you are legally married. Whomever marries you and your witnesses will sign the marriage license which is then used to obtain your marriage certificate.
